Yay! Today is a LONG run day.
The Tilapia was good, and I love squash and zucchini. The boyfriend doesn’t actually like seafood, so he wasn’t too impresed. But that’s really his problem… I mean, who really doesn’t like SEAFOOD? Haha. I want to make a Paella but I’m afraid it’ll go to waste because I know he’d probably gag. I need to figure out which of my friends likes seafood and have a seafood dinner party. I’ll make the boyfriend a burger, don’t worry. I won’t let him starve
I made Eggs Benedict with Garlic Potato Medallions for breakfast. Yum. Hollandaise sauce was courtesy of Julia Child. And Turkey Sanwhiches with a Garlic Cilantro Mayo, Pepper Jack and Avocado. Yes, Yum!!

Results: 2.09 miles, walk 30 sec. (5.5mph)/run 45 sec. (2.5 mph). Burned 200 calories exactly. 35:36.
Wow! I see now why Galloway has me running 30/45. I was pooped. Around 1.5 miles I was tired, around 1.88 miles I wasn’t sure if I’d make it, and at 2.09 I was so happy I basically jumped off the treadmill. How can I seriously be THIS out of shape? I am so glad the half isn’t until October. I’m going to need it.
I added a PROGRESS page to my blog to track how fast and far I go and how I’m improvign if at all. Right now it’s pretty boring, but I think that it’ll be neat to look at when it gets to be May or September.
So I am absolutely obsessed with the idea of this Cook’n Recipe Organizer software I mentioned. I am definitely asking for it for my birthday if I don’t cave and buy it for myself first. It took me an hour to make our menu for the week and then create the grocery list. Half of the battle is finding the recipes. Quit laughing at me, I know I’m nerdy. I’m a recipe junkie.
Dinner tonight: Tequila Lime Chicken Tacos with store bought and canned Refriend Beans (don’t judge me!) and Spanish Rice. I actually am not the biggest fan of chicken tacos, so I think I’m going to make myself some ground beef to use.
Dessert: Rice Pudding with Rum Raisins and Sugared Almonds (Courtesy of Emeril Lagasse). Sunday is going to be my one day a week for dessert from now on. Unlike Stanton, who can eat dessert every night and still have a hott bod, I must do SOMETHING about my diet….
